How to Make Gingerbread Muffins?

Serves 10 // 45 minutes.

Ingredients:

  • 150g whole wheat flour
  • 2 eggs
  • 50g dark chocolate
  • 120 g banana
  • 30 g honey
  • 200 ml milk
  • 20g dark cocoa
  • 30 ml olive oil
  • 5 g baking soda
  • 10 g of spices
  • 50g low-sugar jam, e.g. strawberry
  • 30g almond flakes

Directions:

  1. Blend wet ingredients: eggs, banana, olive oil, 100 ml milk and honey to a
    homogeneous mass.
  2. Sift flour, cocoa, soda, spices through a sieve and blend with a wet mass.
  3. Ready mass pour into cupcake molds (1 tablespoon each).
  4. Add a teaspoon of jam to the molds.
  5. Cover the jam with another layer of mass (1 tablespoon).
  6. Put everything into the oven and bake for about 30 minutes.
  7. If ready, leave to cool.
  8. In the meantime, melt the chocolate together with the remaining milk in a small pot. Add more milk if necessary. Stir to create a coating.
  9. Ready glaze pour on muffins.
  10. Sprinkle muffins with crushed almonds.
