How to make sweet potatoes with feta cheese and pesto on rocket
Serves 1 // 30 minutes.
Ingredients:
- 150 g sweet potato
- 20g basil pesto
- 30g feta cheese
- 10 ml olive oil
- 30 g rocket
- 20 g black olives
Preparation:
- Peel the sweet potato, cut into thin slices.
- In a large bowl, mix sweet potato with oil, chilli, oregano and salt.
- Put the sweet potato on a baking tray, bake at 180 degrees for about 30 minutes (the thinner are slices, the shorter is time of baking).
- Arrange washed rocket, chopped olives and feta cheese on a plate.
- Add ready sweet potato.
- Add a little water to the pesto to get a liquid consistency.
- Pour course over pesto sauce.
