How to Make Pumpkin Cookies with Chocolate, Almonds and Cashews?

Serves 12 // 45 minutes.

Ingredients:

  • 100 g oat flakes
  • 60 g cornstarch
  • 250 g pumpkin mousse
  • 2 eggs
  • 30 g xylitol
  • 30 g dark chocolate
  • 15 g almonds
  • 15 g cashews
  • 5 g baking powder

Directions:

  1. Pumpkin mousse: Bake the pumpkin until tender at 180 degrees. Peel and blend until smooth.
  2. Blend the pumpkin mousse with the other ingredients (except chocolate cashews and almonds).
  3. Cut chocolate, cashews, and almonds into small pieces and add to the mass.
  4. Preheat the oven to 180 degrees.
  5. Line the baking sheet with baking paper. Form cookies from the mass.
  6. Bake ready cookies for about 30 minutes.
