How to Make Salad with Sweet Potatoes, Chickpeas and Cashews?
Serves 2 // 30 minutes.
Ingredients:
- 250 g sweet potato
- 150 g canned chickpeas
- 30 g cashews
- 100 g cherry tomatoes
- 30 g rocket
- 25 g honey
- 20 ml olive oil
- 20 ml lemon juice
- spices: salt, pepper, chilies
Directions:
- Peel sweet potato, cut into cubes, place in a bowl with a teaspoon of olive oil and spices. Mix it.
- Heat the oven to 180 degrees and bake the sweet potato for about 30 minutes.
- Drain the chickpeas from the pickle and add to the sweet potatoes 10 minutes before the end of baking.
- Cut the cherry tomatoes in half.
- Prepare the sauce from olive oil, honey and lemon juice.
- Combine ready sweet potatoes and chickpeas with cherry tomatoes, rocket and cashews.
- Pour salad over the sauce.
